Course Description: Catering is a locally developed course that provides students with daily opportunities to advance their culinary skills as they learn new and creative cooking and plating techniques. Students will cater to the needs of Burnaby South and the local community making food for the International Students lunch, the lunch club and Staff luncheons to name a few.

 Evaluation:

Students are evaluated daily for their practical mark which is based on organization, timing, cooperation, and product. The theoretical portion of the course is completed online using the Rouxbe chef training program. The online program uses a series of videos to teach students culinary basics and high level chef skills. Successful students will take the knowledge from Rouxbe and put it to practice in class. Students are expected to work approximately three lunch hours per term and an occasional evening or weekend if required.

 Who should take this course:

Anyone who takes pride in producing food that is delicious and visually appealing will enjoy catering. Catering provides ample opportunities for the seasoned cook to advance their culinary abilities while offering an environment where the beginner cook can also flourish. Catering students will graduate with the necessary life skills to survive the university years, and feed their future family and friends.
