Course Description: Baking 11/12 is an Applied Skills course. This is a practical, hands on course that allows students to develop their creative baking skills in a relaxed and fun filled setting. Students will build on their basic skills and knowledge as the year progresses. Units of study include quick breads, yeast breads, pastry, doughnut making, cakes including cake decorating, chocolate making, cookies, holiday baking and more. The selection of units and recipes vary for Baking 11 and Baking 12 allowing students to take this course in both grades.

Evaluation: Students work primarily in partners during labs, groups for projects, presentations and some challenging recipes and individually for worksheets and theory. Attendance and punctuality are extremely important for success. Student evaluation is ongoing throughout the year and is heavily based on lab work and participation. End of term evaluation is based on a practical test and / or group

Who should take this course: If you enjoy homemade baked goods, are creative and keen to try new recipes this course is for you. Baking is a great hobby and de- stresser. If you are thinking of a career as a pastry chef, working in a bakery or as a caterer this course is for you. Cooperation, team work and a desire to learn new skills and knowledge are essential. Full participation during preparation of products and cleanup is essential to success in this course. This course works well with a student that has a heavy academic load since there is very little homework. This course is offered during the regular timetable and early morning block. Regular attendance and arriving on time are essential.
